• 4-5 Boneless, Skinless Chicken Breast, Halved Lengthwise
  • 1 Tablespoon Paprika
  • 1 Teaspoon Ground Cumin
  • 1/2 Teaspoon Cayenne Pepper
  • 1/2 Teaspoon Coriander
  • 1/2 Teaspoon Oregano
  • Salt
  • Pepper
  • Extra-Virgin Olive Oil

Preparation

In a small mixing bowl combine, paprika, cumin, cayenne pepper, coriander, oregano and 1 teaspoon salt. In a large shallow baking dish, place chicken pieces and drizzle with olive oil to coat. Rub each piece with spice mix and let stand about 10 minutes. Heat a large skillet over medium high heat and brow chicken pieces. Reduce heat, cover and simmer about 10 minutes each side. Transfer to serving platter and enjoy.
