• 1/4 cup whole-egg mayonnaise
  • 1 1/2 tablespoons walnuts, chopped
  • 1 x 300g focaccia bread, halved, split
  • 1/4 cup basil pesto
  • 60g baby spinach
  • 200g smoked chicken breast fillet, thinly sliced

Preparation
1. Combine mayonnaise and walnuts in a small bowl. Season with salt and pepper.
2. Grill or toast both sides of focaccia. Spread cut sides with pesto. Top bases with spinach, chicken, a dollop of walnut mayonnaise and focaccia tops. Serve.
